The whoopie pie is an old and very delicious Amish tradition. According to legend, whoopie pies were made from leftover cake batter by the Amish women and when the hardworking farmer discovered the treat in his lunchbox, he would shout "Whoopie!" Now you can bake the famous whoopie pies in your kitchen!

Note: The picture above is of chocolate whoopie pies fresh out of the oven. After cooling for several hours, the whoopie pies begin to take on the darker, more characteristic 'chocolate' color.

Whoopie Pie Ingredients

1 1/2 cups of butter
3 cups of sugar
3 eggs
2 tsp. vanilla
4 cups of all-purpose flour
1 1/2 cups of cake flour
1 1/2 tsp. baking soda
2/3 cup cocoa powder
2 1/2 cups milk

Whoopie Pie Baking Instructions

This recipe will make approximately 60 cookies (30 Whoopie pies).

Step 1: Pre-heat oven to 350 degrees
Step 2: Mix (blend on low) the butter and sugar
Step 3: Add eggs and vanilla to the mixture, mix until well-blended and fluffy
Step 4: Add the rest of the ingredients to the mixture and blend on high for two to three minutes
Step 5: Refrigerate the mixture for half an hour
Step 6: Scoop cookie-sized lumps onto a greased cookie sheet
Step 7: Bake for about 10 minutes or until cookies are firm
Step 8: Allow cookies to cool before icing them

Whoopie Pie Frosting Ingredients

2 egg whites
1 tsp. vanilla
1/4 cup of all-purpose flour
2 tsp. milk
1 cup of butter-flavored Crisco
2 1/2 cups powdered sugar

Whoopie Pie Frosting Instructions

Step 1: Mix (blend on low) the egg whites and vanilla together
Step 2: Stir in flour and milk
Step 3: Stir in Crisco and sugar until well-blended and smooth
Step 4: Paste a thick layer of frosting on the flat side of one cookie and press the flat side of another cookie against that. Do the same for all the other cookies
